Mixers of this caliber are expensive, and usually reserved for professional recording studios, medium to large churches, or live sound engineers. The Soundcraft VI3000 is part of the VI series where the numbers change, along with pricing (VI1000, 2000, etc.).
This page uses live pricing tools to give you a completely updated look at what you can expect to pay from multiple vendors.
Note that this type of gear is less likely to be available used, though you can find them on occasion. When you do, the discounted prices seem to be all over the place. Though when bands or churches scale back (or dissolve entirely) those can be great opportunities to get a mixer like this at a steep discount.
Soundcraft VI3000 Sweetwater Price
The Sweetwater retail currently sits at $52,244.00 . Note that this price updates daily. From what we can tell, it doesn't change much, probably because it's already so expensive. Typically Sweetwater is a pretty good barometer of where the most common market value is for a particular piece of music gear. The VI3000 isn't likely to bend much in either direction, though you can check back on this page for pricing updates.

Pricing from Additional Vendors
We could not find the Soundcraft VI3000 anywhere else outside of Sweetwater. Typically Sweetwater is the go-to place for live sound and studio equipment, so this really comes as no surprise. We did find a couple entries of the VI2000 version on eBay, which we've included here:
As you can see, dropping down in the series number can save you a significant amount of money.

Reverb Used Pricing Summary
As with eBay there are a few used options from the series, but not necessarily the VI3000 specifically. In this case it was actually the VI7000, which, when buying used seems to be cheaper than the VI3000 new.

Conclusion
If you want the VI3000 specifically, you're going to be extremely limited in terms of the used options you can find. We'd advise opening up to the rest of the series, if you want to buy used. Buying new is going to be more straightforward, if not more expensive.
We'd also advise, spending that much money on something would be risky without some kind of a warranty or support in place.
Buying used probably will not provide any kind of support or warranty.
We'd go with Sweetwater in this case since they're one of the primary sources of this type of music gear. They've got engineers and sales reps that will help you out if you need any help, or if something goes wrong.
