Our pick: The Flashback
Though similar to the Canyon, the Flashback is a bit more flexible and creative, despite having two fewer modes than the Canyon. It's close, but as long as the Flashback is at a lower price point (about $50 lower than the Canyon) it's an easy first pick.

The Flashback and Flashback 2 are extremely high-functioning given their smaller size. Particularly with the MASH control, the Flashback gives you another tier of control that is essentially a built-in expression pedal. The Canyon does not have this type of feature, which makes it tough to compete with the Flashback in the area of tweaking and functionality.
Still, the EHX Canyon sounds fantastic, similar even to the Flashback algorithms in some cases. So it's not an issue of algorithm quality or sound quality, but it just can't do as much as the Flashback.
Besides all that, the Canyon costs more.

Audio Demos of Both Pedals
If you listen to both pedal's demos you'll hear a lot of sound similarities between the two. They're both capable of a modern, ethereal ambience that you don't get from older tape-delay style pedals.
But pay attention to the functionality and versatility in the Flashback. It just does more than the Canyon.
The Canyon seems a little more subtle, like a less "aggressive" delay, though that could be due to a playing style difference of the two players in the demos. We wouldn't make an argument for better tone quality in either pedal, because it would just be splitting hairs. They obviously both sound great.

The Canyon has more looping time and two more modes than the Flashback. However, it does not have the MASH button. You could make a strong argument for either of these pedals, but I'm sticking with the Flashback, with the understanding that opinions are to be taken with a grain of salt.

Which pedal would we buy?
TC Electronic has always made great pedals for a really decent price, so it's not surprising to me that, with specs similar to the Canyon, the Flashback comes in a good deal cheaper.

So perhaps there is some brand loyalty involved here - certainly some nitpicking on both sides. But this is ultimately a decision you have to make for yourself. If the extra expense on the Canyon is worth the extra modes and you don't care about the MASH button, you might be better off going with EHX.
But for my pick, I'll stay with the Flashback and take the better deal for an arguably better pedal.
